Creamy Chicken and Broccoli


This is a current favorite dinner in our house.  We trend favorites.

We're trendy, what can I say.

It's an easy dish to make. Everyone loves it. I never make enough. 

Will I ever learn?



Steam the broccoli and carrots till just barely tender.

Bright green not mushy.


Saute a couple of diced chicken breasts with some garlic and salt and pepper till browned.

Dump the chicken and cooked vegetables in a large baking dish.



Return the pan to low heat.

We want all of those bits.

The bits are our friends.

They are flavor. We love flavor.



Add 1-2 cups of cream and or milk.  I used both since I didn't have enough cream.

(I went to the milk farm today to replenish our milk supply but it takes an overnight to allow the cream to rise to the top)



Keep the heat on low, no bubbling.

Add a pinch of this and that. I don't measure.  Cooking is much faster if you don't measure.

Paprika, onion powder, dried parsley, dried minced onion, salt, pepper....



Whisk it.

No bubbles.



Here's the dish of expectant chicken and broccoli.

It just needs to be coated with creamy goodness.



My cheese of choice.

You can use parmesan.



Whisk it in.



 Pour.



Stir to coat.



Sprinkle with a bit more queso.

Bake at 375 for 15-20 minutes till hot and bubbly.




You could serve it over rice, mashed potatoes, or pasta.

We are carb free at night so this suits us well as is.  It's creamy and filling.

If you make enough, that is.



Creamy Chicken & Broccoli
3 Chicken Breasts, diced
1 clove garlic, minced
salt and pepper to taste
1 teaspoon paprika
1/2 teaspoon onion powder
1 Tablespoon dried minced onion
1/2 teaspoon dried parsely
A couple of broccoli heads
4 carrots, peeled and diced
1-2 cups cream and or milk
1/2 cup pecorino romano cheese (or parmesan)

1. Steam broccoli and carrots together till just about tender
2. Saute chicken and garlic till browned and no longer pink.
3. Place the vegetables and chicken in a large baking dish.
4. Return saute pan to heat and add 1-2 cups of cream/milk. Cook on low heat. Add seasonings and cheese, whisking all the while. Do not let it bubble.
5. Add sauce to the Chicken and vegetable mixture. Toss to coat. Sprinkle with cheese.
6. Bake on 375 for 15-20 minutes till hot and bubbly.

Next time I'll double it.
