Cranberry Blueberry Crisp


I'm finally back.  We were away for Thanksgiving and so enjoyed seeing my sisters and their families. I hadn't seen them in over 13 months. It was a painfully long time to be separated.

Reunions are so happy. I'm blessed.

The first night in North Carolina, we had dinner at my sister, Tamar's house.  She made this wonderful crisp for dessert.

It's easy and delicious and fantastic for the holidays!


All you need are some cranberries, frozen (or fresh) blueberries, butter, flour, rolled oats, and brown sugar.



I used 1 1/2 bags of cranberries, about 2 cups of frozen blueberries, 1 cup of spelt flour, 1 cup organic rolled oats,  1/2 stick of organic butter, and 1/2 cup of organic brown sugar.

 If you have a food processor it makes the crumb topping super easy.  Just whirl the butter, flour, oats, and brown sugar till crumbly.

Spread the cranberries and blueberries in a 13x9 baking dish. Add the topping and bake in the oven at 350 degrees (F) for about 45 minutes till hot and bubbly.


Cranberry Blueberry Crisp
1 1/2 bags of cranberries (about 3 cups)
2 cups frozen blueberries
1 cup flour
1 cup rolled oats
1/2 cup brown sugar
1/2 stick butter


1. Blend flour, oats, sugar, and butter in processor till crumbly.
2. Spread berries in a baking dish.
3. Top with topping
$. Bake at 350 degrees (F) for 45 minutes or till bubbly.


Serve.


Don't forget the whipped cream.

I want to make an apple-blueberry-cranberry crisp. How does that sound? It's for Thanksgiving; tomorrow!! LOL But I am in the mood for all three...and am searching for a recipe that uses them. Help?
