Upside Down Berry Banana Oatmeal Cake

Can this title get any longer?

This cake is my Banana Bread recipe altered a bit to fit ingredients that I have on hand.

It's my basic Banana Bread recipe substituting oats instead of some of the flour.

I borrowed the idea from my Upside Down Apple Cake recipe.



Substitute whatever berries or fruit that you like or have on hand.




Mixing the bananas and wet ingredients...



The fruit goes in first. Make sure you grease the bottom of the cake pan with some baking spray first.




I had some frozen wild raspberries leftover from last summer.



Add the banana batter on top of the fruit.






Spread the batter around evenly.



I have to make at least 2 of everything in my house.




I topped mine with some left over cereal crumbs. 

It gives the bottom a little crunch.

I love crunch.



When the cake is finished baking, cool for five minutes and invert on a large plate.

First place the plate upside down the the cake pan, and using pot holders, flip in one smooth motion.



Behold the beautiful goodness.








This could be July 4th worthy. Red and Blue berry cake?
