Things I love...



To My Valentine... 16 years and counting. You are my best friend. You are like a good wine, you age well!


I love yellow roses. Don't even bother with the red ones.


I love sharp kitchen knives. I just bought myself a really sharp one that cuts through raw chicken like butter. More on that later.



And I love love love my four boys. My four crazy, loving, HUNGRY boys.

Oh, I could go on and on. I love my family, my best friends, Jesus, cooking (did I mention that?), a good book, a good movie, the beach, skiing, having a cleaning lady (it's been a while), (since I've had a cleaning lady, not since I've cleaned. Really), (Sort of. Okay, I do need to vacuum. Again), and I love Endangered Species Dark Chocolate with Deep Forest Mint, and these brownies my MIL made last week.

Happy Valentine's Day to all of you lovers out there.  For all of you haters, well, maybe you should eat these too (it might help.)

Spelt Brownies (They are TO Die For, almost)

Ingredients:

1/2 cup butter, softened
1/2-3/4 cup sugar (I like to cut the sugar significantly)
2 eggs
1 tsp vanilla extract
2/3 cup Spelt flour
1/2 cup cocoa powder (or carob powder)
1/2 tsp baking powder (use Aluminum-Free!)
1/2 tsp salt

Directions:

Preheat oven to 350 degrees
Spray 8"x8" or 9"x9" pan (or double the recipe and use a 13"x9" - I DARE you!)
Mix dry ingredients into a bowl
In separate bowl, cream butter and sugar till fluffy
Add eggs and vanilla and beat at low speed till well blended
Add in flour mixture until just fully blended
Spread in prepared pan
Bake about 30 minutes or until toothpick comes out clean.
Cool in pan for about 15 minutes before cutting into squares.
