Creamed Spinach


Four out of six in my family love creamed spinach so we like to eat it often.  It's a balance you know, serving food that not everyone likes.  I used to avoid the stuff they didn't like and after awhile realized that I was giving up the foods that I liked.

We found out that we have to train our kids to eat good food. It takes guts, consistency, sticktoittiveness, gumption, and lots and lots of exposure to get them to eat certain dishes.

Creamed spinach is one of them.  I kept offering it.  Now it's two of my boy's favorites.



I like to keep a couple of bags of frozen spinach in my freezer.  It's an easy side dish to throw together when I don't have extra fresh greens.

I usually have raw cream handy and a big bag of Pecorino Romano cheese.



Saute the frozen spinach till it thaws.

Add salt, pepper, some garlic, onion powder, and paprika.



On low heat, add enough cream till it's of a nice creamy consistency. It is, after all, creamed spinach. No?



Sprinkle with grated cheese.



Stir.

Inhale deeply.

Or don't.



Simmer for a few minutes till everything is combined.


Serve.

Pray.

Eat.
