Baked Oatmeal, the leftover kind


This looks like a slice of blueberry pie doesn't it?

I made a ton of oatmeal on a Sunday morning.  We only ate some of it being in our usual hurry to get to church on time.


Monday morning I looked at all the leftover oatmeal sitting in the pot and thought, Self, I should just plop it in a baking dish and bake it!

So Self, I mean, I did.



I topped the oatmeal with frozen blueberries, baked it at 350 degrees (F) for about 30 minutes or so.

I normally make my oatmeal with apples.  I soak it overnight and add peeled chopped apples in the morning as I cook it.  Hence, the apple in the picture.



It was a slice of heaven!

Almost as good as blueberry pie!


I added some butter and hot maple syrup and had me some serious deliciousness.

Sorry for the bad grammar.

Yes, I homeschool. Why do you ask?

I'm all for re-purposing my leftovers.
