Easter...The Recovery


Yes. I'm recovering. 

We ended up with 20 folks for lunch, 13 of which were 15 and under.  That's alotta kids.

I got up at 6 am on Sunday morning to do some of my brunch baking;  Apple Raspberry Coffee Cake (my apple muffin recipe), Oatmeal Banana Bread, and Baked Oatmeal. I also added Overnight French Toast in a last minute flurry of "I need more food" frenzy that I was experiencing.  We still got to church on time.

Of course, the "Overnight French Toast" really was "During Church French Toast."  It's a great easy way to use up bread and feed a crowd. I haven't loaded my pictures on my computer yet. Post to come.

And our egg hunt.  Oma went "above & beyond" again and filled 100+ plastic eggs with all sorts of loot from good chocolates and quarters to Mighty Beans and bouncy balls.  We re-use our eggs each year. I think this was the biggest hunt we have had yet!  Jonah, my 2 year old nephew, got his own set of jumbo eggs to find in my herb garden.  Pictures to come.  (I really need to go and do my laundry. Really! And prep dinner.  We have two simultaneous baseball games this evening at different fields. Life. Is. Busy.)

We also had Roasted Asparagus, a Vegetable Stir Fry, Sauteed Mushrooms, a wonderful Salad made by my Sis-In-Law, Potatoes Anna, Mini Banana Chocolate Chip Muffins, and Brownies for our Birthday Boy, cousin Micah's 8th birthday, complete with candles.

I admit it. I used fancy paper plates.  Less dishes, easy clean up.

It was a fantastic day to celebrate the Resurrection and friends and family.

I'm off to do laundry.
