Blueberry Lemon Muffins


There is something amazingly fabulous about the flavors of lemon and blueberry together.

I like to combine these flavors in a muffin.



Of course we are using frozen blueberries at this time of the year!  I save the expensive fresh one for our fruit salads.

BJs has huge bags of frozen wild blueberries that are delicious in muffins.  Very economical if you buy in bulk. I'm all about economical.



You can use lemon juice from a bottle but if you have a lemon, use it.

My 8 year old is helping again.  Yes, I trust him with a knife. You have to learn sometime.




I like to use the zest of one whole lemon for a double batch of these muffins.

Zest before you cut. It's a bit easier!



ZEST!  I love the smell of it.


If you have a micro plane, use it upside down so you can see what you are doing.

You can also use a zester or a cheese grater. Use what ya have.





I use an ice cream scoop to spoon the muffin batter into muffin cups.

I use silicone muffin "tins." You don't need to spray them. The muffins just pop out.












This time I used lemon zest instead of orange.  Change it up!
